Every restaurant has one dish people cross town for. At Volta, it's the Burrata — here's how it earned its place on the menu.
The Burrata started as a staff meal — something the kitchen made for itself after service. Regulars caught the smell, asked for a plate, and within a month it had a permanent spot in the Snacks section.
We make it the same way today: same supplier, same pan, same stubborn refusal to rush it. Some dishes are on the menu because they sell. This one is on the menu because we couldn't take it off.
